On November 18th, Shelley Bailey’s Colorado Flight School welcomes Chill Switch Wines for an evening celebrating Colorado-grown grapes, traditional winemaking, and the art of slowing down and savoring the moment.

Founded in 2012 by winemaker Dave Aschwanden, this boutique winery in Cedaredge, Colorado, was inspired by his love of wine and the feeling of relaxation that comes with a truly great bottle. That feeling became the idea behind “flipping the chill switch.”

But Chill Switch is about more than relaxing with a glass of wine. Drawing on generations of Swiss winemaking heritage, Dave embraces old-world techniques and a natural, low-intervention approach. Every wine is crafted exclusively from Colorado-grown grapes, without added color enhancers, artificial flavorings, or unnecessary additives.

The result? Wines that let the grapes and the land speak for themselves, with patience, craftsmanship, and authenticity at the heart of every bottle.
